You may need to manage the one defender who is trying to score from the coach's pass. Ensure they are not overhitting the ball each time and giving the opponents no counter-attacking opportunities.

If the one defender is getting limited joy in winning the ball back and playing forward, then vary the receiving player when playing the ball in. 

Keep the practice flowing with a ball ready to play in as soon as a goal is scored or the ball goes out of play.
